Poker Night Grub

I'm hosting a poker night a week from Friday. Anybody have any simple food ideas? I'm thinking of cooking a corned beef for sandwiches, but that's as far as I've made it. There's a good cheddar factory in Shelbyville, so I might get a wheel.

Peppers, pickles, salami and pepperoni. Bleu cheese or jalapeno stuffed olives. Chili. Dirty rice. Barbecue. At one time or another I've had all of these at the ready for my poker buds. The chili and dirty rice were big hits on cold nights. They aren't all that convenient, but our games are casual almost to a fault. As long as it can be served on a cracker or slice of bread and washed down with a beer, I don't think you can go wrong.
