boiled peanuts

A southern roadside staple boiled peanuts come salted, hot, cajun and fiery. A must for any roadtrip, Pop the shell and all in your mouth, suck the flavoring from the shell, split it and the meat melts on your tongue.. toss the shells out the window and repeat..

The only time I tried boiled peanuts, they were from a c-store, canned and kind of nasty. The roadside ones must be different. Are they boiled in water or oil?

Thanks, Sundancer, that told me everything I needed to know. My favorite peanuts are the tiny Spanish peanuts in the shell sold in New Mexico.
