I love shake and bake ! Wed, 04/6/05 9:47 AM (permalink)
I know its lame but shake and bake is my favorite fast way of preparing chicken thighs and legs. I put them under a broiler in a cast iron skillet, and drizzle with a little chili oil. Pretty close to fried chicken and just as tasty !

    I indulge in the Shake-n-Bake a couple of times a year too. It is just one of those things you crave, like a fried Spam sandwich.

          you know theres a really good Homemade recipe for what is essentially Shake and Bake---it didnt invent the idea--just packaged it--this recipe works!! Easy to fix--good tastin--economical--Chicken! Thighs are also my favorite!
          * 1 cup all-purpose flour
          * 2 teaspoons cornstarch
          * 2 teaspoons paprika
          * 2 teaspoons onion powder
          * 2 teaspoons salt
          * 2 teaspoons sugar
          * 10 teaspoons vegetable oil
          * 3 1/2 teaspoons poultry seasoning
          * 2 tablespoons crumbled dry parsley
          * 2 cups fine dry breadcrumbs

          Combine dry ingredients in a mixing bowl; add oil. Mix well. Place in zipper-top plastic bag and store in freezer. Use to coat chicken, pork or veal.

          To use: Line a baking dish with aluminum foil; grease well. Moisten each piece of meat with water. Shake off excess and shake in bag of mix to coat, one piece at a time. Sufficient for 6 pcs cut up chicken.

          Place in baking dish and bake in 400 F oven for 30 minutes or until done, depending on size of pieces.

          Store unused mix in freezer.
          I've done this in a taoster oven successfully--killer with potato salad from the deli and broiled tomatos from the garden(also from the same toaster oven)--It impressed several Berkeley women that i could actully cook dinner for two in a toaster oven in a one room apt with shared bath and have NO dishers to do and all fully recylable! Clouth napkins and all!

          this one may be even better!
          4 c Flour
          2 ts Cayenne pepper
          1 c bran flake cereal, crushed
          2 tb Parsley flakes
          2 ts Garlic powder
          1 tb onion powder
          2 ts Chili powder
          2 tb Taco seasoning
          1 ts Seasoned pepper--like lemon pepper
          1 ts Curry (or more!)
          1 ts Sweet basil
          1 ts Oregano

          Mix all together and use for coating any and all types of meat. I use a
          large size ZipLoc and just keep it in the freezer. You can add more of the
          cayenne and chili powder if you so desire. I usually just throw in what I
          have at the time I make it so it is never the same twice. It is a great all
          round coating.

          As for appearing lame for liking Shake and Bake----it actually IS home cooking!! KFC on the other hand.......

                  I don't believe that product is sold anywhere south of Washington DC....

                  Guess we are capable of combining flour, salt and pepper all on our own! (which is all that bird needs)

                          Remember when they actually came out with Shake 'N' Bake for HAMBURGERS? I think my mother tried it once, and that was once too many. I guess in theory it's ok, but in practice it was pretty bad. There are things in life you just don't do to a burger, and Shake 'N Bake is one of them.

                          Anyway, I like the new kinds - the Barbecue, Honey Mustard and Buffalo coatings. THey're more powdery, so they make more of a paste-like coating than the breadcrumb types. Not bad, especially if you're in a hurry.

                          And as I recall, it was "It's Shike 'n' Bike, and Ah Hayulped!" But maybe that's just me . . .

                          Anyone remember the ads for Oven Fry when it first came out? There was an elderly lady on the ads - she had just tasted it for the first time and was shown raving about it. And if you looked at the writing at the bottom of your TV Screen, her name was (I swear it's true) Toppie Smelly.

                                EEEEewwwwwwwww I can't stand shake and bake. I think I had it too many times in childhood. If I'm going to do chicken, I take a whole chicken and put butter pats and garlic cloves under the skin, a pricked lemon and green onions and garlic and thyme in the cavity, and I baste it and spice it all day in the oven. Of course, this can only be done every now and then because it is rather time consuming!
