I am going to Talladega for the nascar race, and I am going to attempt to start a new "fling" with the spiedie. How long should you marinade the meat? I think it will be a big hit with the infield gang!

Chellie, a very good friend of mine from Binghamton NY who make awesome and I mean awesome spiedies, cuts the meat (chicken) in bite size pieces and marinates in the fridge for 4-5 days, then skewers and grills them.
    I'm hungry now.

My best friend in South Boston was from Binghamton NY also and introduced me to the spiedie. Her kids had summer birthdays so she would always make pork spiedies, but I don't remember her marinating them that long. Maybe 24 hours. Then skewer and grill. They sure are tasty!

No, this was NOT her own concotion....she could hardly boil water.....it was DEFINATELY bought in Binghamton and transported to South Boston.
