 Crispy Fried Catfish

Here is another favorite of mine...


Crispy Fried Catfish


6 skinned catfish or other fish
1/2 cup evaporated milk
1 tablespoon salt
dash pepper
1 cup flour
1/2 cup yellow cornmeal
2 teaspoons paprika
12 slices bacon

Clean, wash and dry fish. Combine milk, salt and pepper. Combine flour, cornmeal and paprika. Dip fish in milk mixture and roll in flour mixture. Fry bacon in a heavy pan until crisp. Remove bacon, reserving fat for frying fish. Drain bacon on absorbent paper.
Fry fish in hot fat for 4 minutes. Turn carefully and fry for 4 to 6 minutes longer or until fish is brown and flakes easily when tested with a fork. Drain on absorbent paper. Serve with bacon. Serves 6.

      Good? Sounds great. Bacon Fat RULES! I would substitute buttermilk for evaporated milk though; but that's jist my opinyin'

          I don't fry at home, so I don't get fried catfish that often. Up here in Massachusetts, the good fried fish is haddock or cod. Catfish is seldom served, and what is doesn't compare to the stuff that you can find all over down south. I also miss that fried Walleye that they serve in Michigan. Ahhhh, regional favorites, a good reason to travel.

            My daddy was an officianado of "horn Pout" while we resided in Massachusetts, which is another name for catfish. He could really cook that stuff. Delicious.
            There are lots of great catfish places to eat close by us here in Tennessee, but I don't like to smell the house up cooking it. Sometimes a gang of us will get together and had a "fish fry" which is done completely outdoors. The usually prove to be barrels of fun with tons of catfish to chow down on.

              Actually, a hornedpout is a particular species of catfish, Ameiurus melas, found in the northeast.
