Garlic chicken pasta
Thu, 06/2/05 3:17 PM
This is one of my favorite quick meals at home.
Oven roasted chicken (have used rotisseri when not cooking alot)
pasta - generally whole grain, not too particular about the shape, but I like something thicker with a little body - at least a linguini
Onion - sweet
fresh ground black pepper
optional paprika, cayenne pepper, parm cheese
Heat skillet, add generous amounts of olive oil (its a good fat after all and it is the sauce)
add sliced onions and sautee until translucent
add 4-5(at least) large cloves of garlic smashed (i use a zyliss garlic press)
immediately add enough chicken for however many people are eating(cubes or strips work well, shredded us wrong texture)
add garlic powder, black pepper, and onion powder to taste, cook until chicken is warmed through.
Salt to taste
Toss with warm pasta.
Garnish with options
This is dinner tonight and I can't wait, it is actually one of my favorite homecooked meals, lots of fat and carbs so I dont make it too often but what a treat.
any recommendations for improvement? I have used a little fresh basil or sliced green peppers from time to time, i like it but my wife prefers it without.
