Fried Rice

Or Cha Han (as I grew up calling it). Not that bland steamed rice stuff with bits of veggies that most Chinese buffets have. I haven't yet recreated my mom's signature dish, but I have come close. She somehow makes it with only a little salt and pepper to season, but I have to go out and get a fried rice seasoning packet to make mine taste somewhat close to hers.
Mmmmmm, heaven. I can eat a plate of it by itself.
