Lemon juice cooks meat?

I am curious as to how lemon juice cooks meat (or at least chicken) while marinating in the Fridge. It would be beneficial for me to know how long to marinate and how much cooking is going on in order to serve fresh fried chicken on a moments notice. I can of course experiment, but I thought I would ask.
