Chocolate covered cherries

In lower East Tennessee, we have a candy company called Brock's which is in Chattanooga. The younger Brock went on to be a US senator and I think he became an Ambassator. Their family made great candy and my favorite was the milk chocolate covered cherry. I never have figured how they manufacture them with the white nougat in the center which surrounds a liquid cherry. Those things are great.
