After reading through the local codes and regulations for my area, I have found that it is required to work out of an approved commissary that is not a private residence, etc when operating a mobile food unit. This is probably common knowledge to most of you however this is all new to me.
I was wondering what most of the mobile food unit owners out there do. Do you just try and hook up with a local restaruant and write up a contract? Please help.

    It all depends on what your county health dept. requires. Mine, (in Indiana), requires that my commisary has a three bay sink, adequate refrigeration. and facilities to wash and maintain my cart. The commisary must also be approved by the county board of health. However these regulations may differ slightly in your county. I use a friend of mines store as a commisary. He sells stuff like personal pizzas and the like, but it is not necessarily a resturant. But it does meet code. Another bonus is that I get to use the store free. Thank goodness. I do have written permission to use the facilities. Check with your local county health dept. for they're rules and regulations regarding commisaries, and your cart, or trailer.

      No professional here, but faced with the same problem a friend who started her own catering business here in the (highly regulated) Boston area was able to get the use of a neighborhood church or convent kitchen for virtually no cost.

          It differs everywhere, but definitely shop around. Most any restaurant will sign a letter of commisary for nothing, and that is all you might really need from them. If you are selling only hotdogs and sausages, you dont need to "prepare" anything in a commissary, so you wont need to actually use one. "wink wink". Just be sure you're not chopping onions, and the knife is away if the health department guy comes by.
          I use a city approved commisary that signed my letter for nothing with the promise to buy something from them. No minimum or long commitment. I called other commissarys from the same list the city gave me and some places charged over $400 a month! Deposit and all that. I dont know who can afford to use these but they do. I usually get something from the commisary a few times a week, but do most of my purchasing elsewhere. These guys are too nice not to buy something from them.
          You're health inspector is really the best person to ask as to what facilities will be OK. Remember, the inspectors want people to do things right and succeed! Be upfront and ask direct questions.

                $30-$40 per month is the norm here in the Orlando, FL area. That covers the letter, water, waste water, washing, etc. Storage will cost you additional.

                    I'd do the local church or non profit personally... They'll appreciate the extra 'donations', not to mention it wont break your bank... If ya get a major break, remember to pay it forward!
