Broiled Tomato's=or Tomatoes in General Sat, 02/18/06 9:56 PM (permalink)
(Topic name change )
I used to work at a place in Islamorada, Fl, and they used to serve broiled tomato's as a garnish on every plate.
My mom used to make them all them time also.
Half a tomato, little garlic, salt, pepper, and breadcrumbs and melt a bit of cheese on top.
Yum....
I Can't wait till we get some nice tomatos available and make some~

Islamorada--Hmmmm. Memories: 1968 . . . spring break in med school . . . 10 days lounging in the keys . . . diving, fishing, living in the shell of an abandoned motel and showering in the marina across the street . . . getting my picture taken next to somebody else's trophy tarpon and sending it to my mom . . . . Can't even remember what I ate . . . short on funds and conserving money for gas to get back to school, I probably didn't eat much, even broiled tomatos, but a beer or two was consumed.

a friends gramma would halve roma or plumb tomatos, drizzle with olive oil, salt, bread crumbs and mozzaral, pop them under the broiler until just golden. Served with a small glass of Strega (sp) this has always said italian family dinner to me..

it's an easy way to give unpatient kids some food while waiting for an italian dinner that has been sending odors throughout the house all day long.
I know, because I was the kid.

Grilled (broiled) tomatos are a standard part of the full traditional English breakfast. Growing up in New Jersey, fried tomatos (floured and into some oil) with white toast were standard summer fare.

Question. Doesn't the cheese melt way before the tomatoes hardly even get warm? No one said anything about broiling the tomatoes for a while before adding the cheese.

use the middle postion for the rack and by the time the cheese is brown and bubbly the tomatos are warmed through

Roossy, my name brings back found memories for you, the broiled tomatoes bring back found memories for me. Way back when I was a kid my mom would make em at least once a week. I can't remember her exact recipe but I make an attempt at them often. They just never taste quite as good as moms. They were close to what Dreamz recamended.

My best attempt has been some olive oil, italian seasoning, cracker crumbs, parmesan, and then mozzeralla. Them bake em like Dreams said. I've also used italian dressing instead of the olive oil and italian seasoning, and no crumbs. There good lottsa ways I guess!

These used to be called Parma Tomatoes at the A.G.Ferrari chain in the SF bay area.

In tomato season I complain that they no longer have them.

If anyone else misses them at that deli, please turn up the heat!

Pizza Margherita is topped with fresh diced tomatoes, fresh basil, and mozzarella (freshly sliced is best). The colors red, green, and white represent the colors of the Italian flag. But that's coming from a Greman/Dane so you might verify with a real Italian not just someone who likes the food.

It's a tomato pie made with tomatoes, cheese and basil -- the Italian national colors of red, white and green. It is named for Queen Margherita of Italy. The first one was made by apizza maker Raffaele Esposito in honor of the queen's visit to naples.

                                      Blue Cheese Broiled Tomatoes

                                      Ingredients:
                                      4 large tomatoes
                                      1 tsp. sugar
                                      ½ tsp. dried basil
                                      1/4th tsp. salt
                                      Fresh ground pepper
                                      1 cup soft bread crumbs
                                      2 Tbsp. melted butter
                                      ½ cup crumbled blue cheese

                                      Directions:
Preheat broiler setting to high. Cut stem ends off tomatoes and cut each tomato into 2 thick slices. Place on broiler pan.

Combine sugar, basil, salt and pepper, and sprinkle a small amount onto each tomato slice. Slip tomatoes under hot broiler and broil for 2 minutes and remove. Add bread crumbs to melted butter and toss lightly with a fork. Add blue cheese and toss again lightly. Spoon atop tomato slices, and broil until crumbs are nicely browned – approximately 1-2 minutes. Serve immediately.

What is everyone doing with their lucious tomatoes this summer?
I had slices of local farm fresh juicy ripe ones thick sliced on a croissant/w/miracle whip, and pepper while hovering over the sink....

This was one of our favorite tomato meals this summer, made from all the smallish heirloom tomato varieties - pasta sauce with fresh basil and lump blue crabmeat. I took this picture right before I tossed the room temperature sauce with hot drained linguini and cubes of brie cheese.
