One of the easiest, tastiest sides you can possibly make, and it's really quick. If anyone else has suggestions, i'd love to hear them!

this is how i usually do it:
Slice some fresh, soft mozzarella, then cut some roma tomatoes into pretty thin slices & chop them in half. Then get some fresh basil leaves and cut them into thin strips. Get some newman's own balsamic vinaigrette (i swear it sounds ghetto but it's really good). Then I lightly toast the bread on a cookie sheet or toaster oven or whatever I have handy that's not an oven rack, put a mozz slice and a tomato slice on, with a few strips of basil. Then sprinkle a bit of the vinaigrette. Then i eat so many I'm too full to eat whatever comes next.
