Well, you probably all remember the Shakespeare line about it being "beter to have loved and lost than to have never have loved at all" ? Salmonella poisoning wouldn't quite fit that category. It's better not to get it at all; especially for the elderly and for children. It used to be that it was caused if you weren't careful enough to wash the outside of the eggs if they were contaminated. You could look at a dirty or cracked egg and tell if it might pose a risk. Now the Salmonella sometimes appears in the egg material (white and yolk) itself even when the shell is clean. The Center for Disease Control estimates that this occurs about 1 in 10,000 eggs. The risk is removed by heating the egg (both yolk and white) to a temperature of about 145F degrees. Most of us could eat raw eggs our entire adult life and not have a problem, but it is a real risk.         I think that I'll skip the sunny side up eggs and have a nice, fresh spinach salad instead.

            Raw eggs is a staple in the Japanese diet. I don't know what the difference is--maye the Japanese have sanitary standards much higher than the US? Their most typical way of having the raw egg that I know of is dipping the sukiyaki into a cup of raw egg before eating. They also have raw quail eggs topped on sushi, raw (chicken) eggs on top of rice bowls or mixed into hot rice, not necessarily cooking the egg thoroughly. Most Japanese (and other asians) I know prefer their eggs sunny-side up.
