I'll second those places and add:
any of the Original Pancake Houses or Walker Brothers restaurants -- there are at least 3 that I know of, on the Gold Coast, in Wilmette and in Highland Park; the Wilmette location would win my vote for best breakfast place in America.
the Lucky Platter, Evanston. Very creative, slightly higher than average prices
Le Peep, also Evanston. Part of a chain I think though I've never seen another.
Golden Apple. Best 24-hour restaurant in the area, breakfasts are huge as you might expect but also quite good.
Chicago Diner. Vegetarian, but if you can accept that limitation, excellent. Great selection of fresh juices.
Probably more I'm not remembering, but that'll do.
