 impossible pie

My mother was a great pie maker and I, her oldest son, have been a bad pie maker----- until 2 weeks ago when my sis-in-law "the blonde bombshell" told me about Impossible Pie. Soooooooooooo Easy !!!
I looked up the Pie Forum here on Roadfood, and no word of it was found. Here is the recipe for Coconut Custard, one of my favorites.

In a blender combine 2 cups of milk, 4 eggs (Opened and the shells thrown away), 3/4 cup sugar, 1/2 cup Bisquik, 1/4 cup butter and
1 1/2 teaspoons of vanilla. Cover (or wash the ceiling) and blend on low speed for 3 minutes. Turn into a greased pie pan and let stand for 5 minutes. Now since this is a coconut pie we must sprinkle a cup of coconut on the top. Bake at 350F for 40 minutes.

If you have unexpected guests for high tea you can make this while you learn the latest gossip. And there are other recipes, just look up impossiple pie on your 'puter, buy the ingredients and wall-la you too can be a pastry chef. Bon Apetit !!!! RIP Julia !!!!!
