The Wisconsin Department of Health does not allow raw food(brats or burgers)to be sold from an approved and licensed cart. Grills may be used only when permanently attached to a cart, while free standing grills cannot be used. Hot dogs may be grilled because they're already precooked. The same would be true for a precooked brat. If pulled pork is precooked, it may be sold from a cart

    This falls into a different category when you are working an event. I can use my whole set-up including my commercial grill, steam pans, extra tables, and canopy.

They have 5 or 6 big tents paid for by corporate sponsors and all I wanted to do was get on the list of university-approved caterers. The U of I told me to send them a $1000.00 and then they'd look at my insurance, background, equipment, and menu. The $1000.00 was non refundable no matter what they decided. LOL So I dropped that but I may do it next year, when money is not so tight. The money at these events is great but the U of I wants a cut of everything.

        That's a good break for you regulatory-wise. Here the county and city are a little less strict on temporary events (handwashing, canopy, ice coolers).

        The trailers here can prep the raw meat but not carts.

            When It comes to events, you are allowed to set up a lot more equipment so you can get up to code. I have a three licences. One form Denver, one from Tri-county, and one from the state of Colorado as a mobile restaurant.

              What does your event equipment consist of besides your hot dog cart?

              I have two stainless work tables, three electric food warmers, three large coolers, propane camp stove and one cash register.

                Howdy,

                Our SnoBiz cart at Home Depot is getting more "bidness". We're grilling Onions, which seems to reel 'em in like Fish! Sodas are selling well; I'm cheaper than the bottled Coke machine adjacent to my cart (I sell canned).
                We're building up customers and the cooler weather helps hot dog sales. Soon we'll add coffee/donuts. I'm told that Christmas time will be very busy..

                  Larry, the smell of grilled onions is an old trick used by the Chicago Polish sausage vendors on Maxwell Street many years ago. We use the scent of freshy steamed buns to lure our customers. Black Friday, the day after Thanksgiving, has always been our busiest day of the year(1000+dogs/three years in a row). That Saturday and Sunday are extremely busy too, especially if the weather is bad on Friday. The last two weekends before Christmas are always busy.

                    Glad that your business is picking up.

                    Sounds like you got the electrical outlet problem fixed.

                    We have grilled onions at past events and will do so at our Home Depot location(when we finally get approved :))

                      As of tonight I have been issued my Special Use Permit for my Home Depot location. I now have to obtain a Health Permit from this city and will then be able to setup at the Home Depot.

                      Its been a long ride but I think it will be worth it :)
