love homefries but hard to find good ones

    The bad ones are overcooked or undercooked.

      Silver Diner.
      Crisp on the outside, tender and mealy on the inside, beautifully browned. We recently had these in the southern VA area on the way to the Outer Banks, NC. and I haven't had any that good for a long time, except for my own.

          Olympia Diner, Newington,Ct. no papika,onions,or peppers. just homefries done just right.
          Tower Grill, Waterbury,Ct. with just a little onion, nice taste.

                Crystal Restaurant in Rehoboth Beach, Delaware. Lightly browned sliced potatoes with just the right amount of slightly caramelized onions.

                  Making me hungry! Nicely browned homefries are the perfect accompanyment to fresh eggs. As much as I like the potatoes at Waffle House, real homefries are the best. I recall the best I ever had was at a diner in Bridgeport, CT..."White's Diner." Not even sure if it's still there. But they were so good that I'd order them with sandwiches, burgers as well as with breakfast. Just a little onion was blended in. And a pile of them sat on the grill always...the cook would periodically give 'em a turn so the browning was even. And always nice and hot!
