O'Donnells Seafood Norfolk Mon, 10/9/06 11:12 AM (permalink)
In the Washington DC area there is a restaurant named O'Donnell's which is now in Gaithersburg, MD. Originally it was on E Street and then Bethesda.

They have menu items designated as Norfolk style, Crab, Shrimp, Lobster and a combination. The menu says it is prepared with Tarragin vinegar. It is unique and extremely delicious. They also have rum bums to die for.

I can't find a recipe for this type of Norfolk recipe.

Where can I find this recipe? Does anyone have one similar to this?

Thanks,

Conrad

PS: I am still looking for a place on MD's Eastern Shore with honest to God fried clams, not strips.

Well, good luck with the clams, they don't seem to understand them in Maryland, at least the fried ones. You'll probably have to go to New England for those.
When I had crab Norfolk, it was a little casserole, crab mixed with a creamy sauce, then garnished with strips of Virginia country ham. I think Norfolk style refers to the ham. Anybody else know about this?

AFAIK crab Norfolk is NOT supposed to be made with a creamy sauce; the recipes I've seen call for the following:

      Lump crab meat
      Red pepper
      Black pepper
      Old Bay
      Vinegar or beer
      Butter (optional)

The butter is flaked or drizzled on top of the crab meat/seasonings mixture & then the whole thing is baked in the oven. I omit the butter, as I think it detracts from the taste of the meat.

The dish made with cream is called Newberg I believe.

Did you try googling Crab Norfolk? The O'Donnell's recipe is on the first page.

Every recipe that I've seen has butter in it.
