I just found a cookbook (circa 1995) by Mimi Sheridan of international chicken soup recipes (title above). It features chicken soups from everyplace from Aruba to Yugoslavia (Zanzibar would really fill it out!), over 100 recipes. Some interesting ones include: Albania, Ethiopia, Scotland, Ecuador, Belgium, Moldavia, Tunisia, Ghana, Malaysia.

Also USA is represented from NE Chicken & Corn Chowder, Lancaster Chicken Corn Soup with Rivels, Creole Chicken & Orka Gumbo, Grenn Chile Chicke & Posole Soup, Wisconsin Chicken Bouyah.

Very intertesting book. Has anyone used it or want to suggest their favorite "ethnic" chicken soup?

            Hot wing chicken soup, devised here at roadfood. One of the few chicken soups that doubles as finger food.

              NYNM, funny, my standard chicken soup recipe is from Mimi Sheraton. I got from the Boston Globe, supposedly adapted from that book, I think they titled it "Mimi Sheraton's favorite chicken soup." A great homestyle broth you can then add noodles, peas, etc. to.

              I'd have a hard time choosing between Matzoh Ball, Won Ton, and Avgolemono. And there's too many ethnic varieties I haven't tried.

                Other variants of chicken soup that I enjoy are:

                Chinese egg drop(made with homemade chick stock)
                Italian Straccitella
                Greek Avegolmono
                Mexican Sopa de Lima

                All are chicken broth based. Some have chicken meat in them but they all give me that same simple comforting satisfaction that chicken soup does.

                  Just add jalapenos, seeds rinsed if you don't want it to spicy, to any kind of chicken soup. Now you can call it "Texas Style Egg Drop Soup". Pickled, or fresh, jalapenos go well with any kind of chicken soup or dish. Is that ethnic, hmm quess not. Regional maybe? Sure is good though!

                      No doubt that you will like it CK. They even make Campbell CN pretty good. I saw some pickled jalapenos at Wally's, just one in a small clear bag, 25c. Hey, you could sneek those in, when you go out for Chinese! I knew they would be good for something, just could't think what.

                        When we go to Chinese restaurants and order wonton soup (I think it is chicken based) we add a spoonful of hot Chinses mustard to each bowl of soup. That'll clear your nostrils!mmmmmmmm

                          I love all that hot Chinese stuff! Several hot sauces, and that Japanese green sauce. Not sure what you call all that stuff but I am known to put any of it in my soup.

                            I love the chicken matzo ball soup at Zaftigs Delicatessen in Brookline, MA. Whenever I was sick, I would get a quart of it and it always made me feel better. The Jewish penicillin!

                              I made matzoh ball soup last night - the kids were sick of turkey. I use the recipe from the matzoh meal package, but I always use real chicken fat for the oil and seltzer in place of water. I also add dried dill to the mix. Then I cook them in a pot of stock on a low simmer for one hour with the pot lid ajar. We like 'floaters' but if you like 'sinkers' cook according to the package directions.

                              For the soup, it's a basic chicken broth with extra parsnips added for sweetness.

                                I cant say the Whole World Loves it... But for me, it's a decent budget soup that I cant argue over. Mine consists of stock that I've saved from other foods (chicken salad, etc) and to whatever veggies I have on hand to toss in. (Though tossing in rice or wild rice is my fav).

                                  2c La. hot sauce, or the kind you like

                                  1 stick buter

                                  1c chicken broth, more or less to taste

                                  choped up chicken ( or turkey, I guess? ), whatever kind you want

                                  cooked rice, whatever kind you want

                                  Directions; yall don't need directions.

                                        I'll cook my chicken in a crock pot loaded with seasonings.. I save the liquid (chilling it first and removing the fat) and freeze it..

                                          Adj, OKRA sounds good! The soup will need a new name maybe? Hmmm, maybe not, okra / cajun, still works. No roue so we can't call it gumbo.

                                          Oh, Vic, do you put any water in the crock w/ tha chicken? That broth sounds great!

                                            My mother-in-law used to put homemade noodles in her chicken soup. Boy, do I miss that! Hubby preferred her dumplings in the soup. And my grandmother used to put barley in hers, very unique, I don't know of anyone else that did that.

                                              In the far distant past I decided to make the best chicken soup known to man. First, though, I needed a great recipe. Knowing that Jewish Penicillin was actually chicken soup I headed for the Jewish Cookbook section of the library. There I found Golda Meir's recipe. If it was good enough for Golda it certainly must be good enough for me and mine. For those of you young whipper-snappers, or those older folks with poor memories, Golda was the Prime Minister of Israel.

                                              After reading the recipe though I put it back on the shelf and looked for another. Golda's recipe insisted that the feet of the chicken be purchased along with the rest of the bird (you won't find them in Wal-mart). The feet, or the talons, or the claws of the bird had to be cooked up with the rest of giblets, etc to make the "bestest" stock there ever was. Well, brothers an sisters that may be true, but I decided on the next best recipe I could find and let it go at that.                                                 I just made matzo ball soup Monday night. I will have to try the seltzer trick----I assume it yields a fluffier matzo ball?
