The last of the operating Pig Stands in Texas have been shut down by the state. There were 2 in San Antonio and one in Houston.

The company has been in bankruptcy for a year and had already sold 2 units to raise funds. The Comptroller of Public Accounts ordered the remaining ones shut for non-payment of back taxes.

Pig Stands have been credited as being the first drive-in; they also claimed to have invented onion rings and Texas Toast. The first one opened in Dallas in 1921, the first one in Houston in 1922. Pig Stand # 7, on Washington Avenue west of downtown, may or may not have been the first one here, I don't know. The building it is in only dates back to 1960 according to the tax rolls.

The clientele was mostly older but there were younger people who enjoyed the food and the atmosphere and locals are mourning the unexpected closing. Given what's happening in that old neighborhood (gentrification), tear-down is almost certain if no new owner takes it over with an eye to keeping it open.

The chain is for sale if anybody's interested in owning a bit of restaurant history.

There are websites about Pig Stand's history on line and it's been mentioned in the past here on Roadfood.
