Blue soup

Hi,
I'm a newbie here. I made some soup and it turned blue. All it had in it was fresh green beans, a can of corn,red cabbaged and a brick of Ramon soup mix. I am concerned about the color. I ate it and have'nt died yet. I do'nt think it's toxic. I was concerned one other time when my wife was makeing peanut butter balls candy. I know that parifine wax comes from oil and I could'nt make the connection. I thought maybe she wanted to be a widdow. So I called poison control. Hope someone can shed some light on this.

Not certain, but perhaps the red cabbage is what turned the soup blue. Maybe the mix with the green beans had something to do with it but doubt very much that it was harmful. Red cabbage has a tendency to turn darker, or maybe even bluish when cooked.

Just a thought.

I don't know but I'd look into the possibility of a chemical reaction in the red cabbage. I think I recall hearing that at a certain pH level, red pigments in some foods will turn. Anyone else know more about this?

Yep, red cabbage is like litmus paper. Blue in basic solutions, red in acids. Here's one source. http://www.epa.gov/docs/acidrain/education/experiment3.html

If that's it, dropping some vinegar in your soup should make it miraculosly change color.

Vinegar will always leach the color out of red caggabe. I made the mistake of making cole slaw out of red cabbage once. ONCE! I am guessing it was the canned corn that did ya in.

When I was young and stupid, I ate turquoise blue scrambled eggs for breakfast every morning. You'd not believe the lovely shade you can turn eggs with about a teaspoon of standard liquid food color.

The purple color aside, yours look better than the real thing.

The cabbage turns purple when you cook it.....
I wonder.. hmmm.. if I put some green food coloring in the green cabbage, will it stay green, and then I can have another day glow runza?

Maybe its the copper in the water reacting to the sulphur in the veggies.
I don't think you have to worry about it although blue is unappetizing.

I had green eggs (literally) in the Army once....

I will have to find my recipe for blue corn soup, it was a wonderfully rich creamy concoction, that had a pale robins egg blue color to it.

Getting back to the Dilemma that started this thread reminds me of the time I used a red/purple cabbage to make some cole slaw, instead of green.
I had a blue tinted liquid by the time it was ready to serve, so I would have to say, its not the pot, its the cabbage leaching out its colors, mixing with the vinegar, I would assume, because the only other "liquid" item's in there was pineapple juice (from the chunks) and miracle whip.....
Ever seen blue miracle whip?
It even stained the pineapple pieces that I used in my cole slaw.

Does this mean purple cabbage is DYED? You know, like the colored carnations at the cheap florists? They leach their color into the water you put them in.

Maybe next time use a tried and true recipe?????

YES, it is the red cabbage turning everything a a funky blue color

next time use white cabbage and you won't have that problem.

It made a quick soup, good for a quick meal.

Soupy use the search and look up some of the recipes we have posted here, I think you will find them wonderful and easy.
