Ciarduna Recipe?? Tue, 12/19/06 4:15 PM (permalink)
I have searched countless times for a Sicilian pastry named "Ciarduna" and nobody seems to know what it is. Ciarduna are cookies made from ground almonds that are wrapped around tubes, much like cannoli and filled with either a sweet ricotta or mascarpone mixture. This is apparently a recipe that has been kept a secret by those few bakers who introduced it to the States. There is even a link to further describe the pastry itself: http://en.wikipedia.org/wiki/Ciarduna. So far none of the books on Sicilian cookery and confectionery tell of this fabled classic. It's obvious that those savvy Sicilians prefer not to divulge to anyone their secret formulas

I take it no one here has even heard of this recipe.. I have only recently come across it's description on Wikipedia.org. The only recipe I have seen is rather uninformative, as it was translated directly from the Sicilian instructions. Because of this, certain key elements are not mentioned in the list of ingredients, and those which are do not give measurements.
This is because most pastry recipes are handed down orally by families who make them, and are measured entirely by hand. It is this method of "mani sapienti" (knowledgable hands) that makes true Sicilian confectionery such a culinary delight to travelers. Recipes are presented very differently in other countries, and usually to members of that person's immediate family only. This recipe I'm searching for is merely an example, one which has almost never featured in America.

This is actually the only account of a written recipe for this pastry. I was really hoping someone may have a more detailed account of it, but I appreciate your willingness to help me out.
        Buon Natale!!!
