Oyster & Artichoke soup. Anyone have a recipe? Mon, 01/15/07 7:35 PM (permalink)
I lived in New Orleans about 25 years or so ago and my favorite soup there besides Gumbo Ya-Ya was Oyster and Artichoke soup from a place called LeRuth's. I used to make it at home and had a recipe from the local paper. That recipe has been lost over the years and I think LeRuth's is long gone.
Reading this forum has made me think of soups I really liked and crave again.
It was cream-based with bits or chunks of oysters and artichokes. There was some lemon juice in it too. It wasn't that hard to make, I just don't remember all the ingrediants and their quantities.
Any ideas?
