CHICAGO (AP) -- A hot dog restaurateur who advertised that he was selling foie gras despite the city's ban on its sale has become the first to be cited.

A city health department inspector turned up just before Hot Doug's opened Friday, slapped owner Doug Sohn with a citation and confiscated the duck- or goose-liver delicacy.

    And just 2 days before his 2-week closing for vacation...to France, no less. Chicagoans waiting to see if he chooses to fight and who steps up to be on the team. Alot of famous chefs in this city have been outspoken regarding the ban.

            I just saw a show on PBS last weekend about Hot Doug's foie gras sausage. Doug was talking about how great foie gras is, and how the politican who pushed for the law was misinformed about the "evils" of foie gras.

            The host of the show then indulged in the "illegal sausage", along with some duck fat fries. I LOVE PBS!!

            I hope he continues to fight for his right to sell his sausages!!

              When I heard about it I pulled out a 1/2 pound package of foie gras trimmings, a small boston butt, some veal trimmings and a knob of black truffle. K5 came out, grinder attachment installed and sausage was made. Seasonings adjusted and into the sausage stuffer.

              On the grill and served w/ my wife's very light soubise sauce. Sides were homemade sauerkraut (very light in taste w/ just a hint of caraway), green beans w/ shaved almonds and nice scalloed potato dish from Bistro Cooking (pg 98). We raised our glasses to Doug and then went to the pond to watch the ducks.

                  Michael,
                  I didn't even mention the cognac. The ducks thought the drunk humans were entertaining. To be PC no one drove home...they stayed at the office, it has bedrooms.

                                  Since V960 hasn't posted a response, I will give you a few suggestions for Raleigh (where I lived for 10 years and worked with state government downtown).

                                  For country southern cooking, go to "Big Ed's" in the City Market area. Outstanding breakfast in particular. Ed's son has a place with a similar menu at the Farmer's Market.

                                  There is also a good seafood (typical southern fried fare) in the Farmer's Market. Another good southern fried seafood place is Captain Stanley's just off South Saunders.

                                  The Angus Barn on old highway 70 between Raleigh and Durham near the airport has some of the finest steaks you will ever find.

                                  42nd Street Oyster Bar in the downtown area serves excellent upscale seafood.

                                  Char-Grill on Hillsborough Street near the NC State campus has great grilled burgers. I always go for the large "steak".

                                  Finch's on Peace Street (near Peace College) has good food, and the best onion rings I have ever eaten.

                                  There are several good places in the Cameron Village shopping center--Leon's Deli and the pizza place next door were favorites of mine.

                                  Snoopy's has delicious hotdogs.

                                  I never did particularly care for any of the barbecue in Raleigh (no wood burners that I know of), but Cecil Cooper's near City Market and the Barbecue Lodge on Capital Boulevard north of the beltline were the best I had there. I'm more a fan of the Lexington style Q that isn't (wasn't) available in the Raleigh area.
