Broccoli & Cheese Soup

My club is having a lunch meeting next Friday and I would like to make Broccoli and Cheese Soup as an alternative to a meat based soup due to the Lenten Season. My question is can I make this up ahead of time and reheat it for the lunch or will it loose the thickness? Any suggestions? There will be approximatly 50 people attending. Thanks.

Yes, you can make this soup up ahead of time. Be sure to thicken it with roux which will give the soup more richness and texture. Save a few blanched small florettes to add to the soup when re-heating for color.
