storing eggs/white vs brown eggs

It seems that only in America do we buy our eggs from the dairy section of our grocery store that have been refrigerated. But I once visited S. America, Paris, and London (not all at the same time) and they all sold eggs right there on the shelf--- not refrigerated. I'm curious about that. Also, I noticed that they only had brown eggs, I never once saw a white egg...I already read the posts on why they're different, etc. but it's interesting that those countries prefer chickens that lay brown eggs.

Eggs will last a long time --IF--you don't wash them until your ready to use them and they are not exposed to really hot weather--remember that till very recently--NOBODY had a fridge and they were stored in a cellar or spring house.

The reason we prefer white eggs to brown eggs is because we are a racist society. Why, when I was growning up, and that was way before Brown vs Board of Education, farmers could hadly give brown eggs away. My grandfather raised chickens and we had to eat the brown eggs because he couldn't sell them. Now, of course, because of the civil rights movement and activist judges brown eggs fetch a premium price.

Not tell mass production and salmonella did it become a big deal about refregaration of eggs. I buy from a local farmer whenever I can. MikeS.

I don't know if this is true, but some years ago my local vegetable guy started carrying eggs and was forced to stop. He was getting fresh eggs and selling them unrefrigerated. Apparently that was against state health laws. One of the arguments was that supposedly if the eggs had been refrigerated or transported at cold temperatures they then did require continued refrigeration.

It kind of surprised me when the mexicans I was living and working with stored the eggs in a cabinet of course with 20 to 30 guys we went through a couple of flats a day. And room temp eggs cook nicer anyway

Refrigerator? We don't need no stinking refrigerator!! Heck, I don't even wipe the chicken poop off the eggs anymore...I am just a bit more careful when cracking them open however.
