Good Breakfast In Matthews, NC

We are a bunch of bowling woman who travel from state to state every year for nationals. While we were in Tulsa, OK we got spoiled by a place called Jimmy's. Well this was the best breakfast place around. Here in PA we have never tasted the way they made their eggs & omlettes, oh my they were to die for, any kindof omlettes you could imagine they made. My question to anyone out there is where is a place like this in Matthews or close by like this???
