Does anyone have a good recipe for chicken salad sandwiches?

    Slowly boil your chicken until tender. Add chopped celery, chopped dill pickles, chopped boiled eggs, salt and pepper, mayo and then add a splash of pickle juice and chicken broth. This adds moisture and flavor both to the chicken salad.

      Rotisserie chicken from your grocery will often make a superior chicken salad. Lots of good mayo of course although I find that Hellmans light is indistinguishable from the higher calorie spread. I like to add a little curry powder and toasted almonds

          I don't know the recipe but the chicken salad sandwich at Blue Ribbon Bakery in NYC is to die for...

            Got to agree with markeble.
            I love chicken salad and prepare it using my own poached, roasted, left over fried etc. chicken.
            I find, (particularly on sale) rotisseried or roasted chicken from a supermarket, to be an excellent and easy way to go.
            These chickens are usually well seasoned and usually juicy enough to provide a really good base to receive a good amount of Hellmans mayo.
            I find no seasoning is needed whatsoever when using a cooked store bought chicken,

              I just made a big pot of chicken soup for Rosh Hashanah tomorrow- so I'll be having a chicken salad sandwich for lunch tomorrow while I make my Trukey and glazed carrots and stuffing and matzoh balls and noodles and another Challah.

              I cut up the dark meat and white meat and mix them, add celery, salt, pepper, a chopped up hard boiled egg and mayo. I also make croquettes and pot pie with chicken from the soup.

                    In addition to the Hellmann's and celery, add some halved seedless grapes and a small pinch of cayenne. The sweetness of the grapes offset the little zing of cayenne. I prefer poached chicken for making salad.

                      Sure! INGREDIENTS

                      2 cups finely diced cooked chicken or turkey
                      2 tablespoons grated or very finely chopped onion
                      2 tablespoons butter or margarine
                      1/3 cup all-purpose flour
                      1 cup milk (or non-dairy creamer, if you want it to Kosher)
                      Salt and pepper to taste

                      3/4 cups fresh breadcrumbs
                      Oil for frying

Gradually add the milk, stirring constantly until thickened and all lumps are dissolved. Cook for about 3 minutes but do not brown. Add salt and pepper; remove from heat and let cool. Stir in the chicken mixture, lemon juice, and parsley; combine well. Place in refrigerator until chilled.

                      Heat oil in large fry pan over medium-high heat. Form the chicken mixture into slightly rounded patties. Dip each into the beaten egg and then the breadcrumbs. Fry until browned on both sides.


                      Let me know if you want the Cicken Pot Pie Recipe! That uses up the carrots from the soup too!

                        Don't forget B-B-Q chicken salad, not just grilled but sauced. I make this when I have leftovers.

                          Have to agree with lleechef, halved grapes taste great in chicken salad. Some crumbled bacon is also good. Sometimes I use a little chinese mustard for the zip. I'll have to try cayenne.

                            Take and chop the chicken from a lemon pepper rotisserie chicken from any grocery store.

                            Chop as much celery as you like, add a can or two of mandarin oranges, drained, chopped walnuts and moisten with bottled coleslaw dressing.

                            Yum. Sweet, tart, piquant and easy.

                            May sound a little cheesy but it really is a pretty good congolomerate of flavors.

                              I used to work at a yogurt store/mini resteraunt and the owner was from Missouri. I loved the chicken salad and swiped the recipe.

                              this is all by eye:

                              1 10 oz canned white chicken (or rotisserie chicken)
                              tiny pinch of salt
                              miracle whip or salad dressing/mayo of choice
                              about 1/2 tsp of powdered mustard
                              about 1/4 to almost 1/2 tsp of taragon (start light the first time, too much taragon will overpower the taste and ruin it)
                              about 1/8 tsp white pepper

                              you can add a little lemon juice if you like, I normally do not.

                              mix it all up and make sure it looks like there is a little too much mayo. cover and let sit in fridge overnight, the flavor really comes out if it has had a night in the fridge. the extra mayo is because the chicken will suck up the mayo and can dry out, so i always make sure there is a little more than i would want if i were to eat it on the spot after making it.

                              at the resteraunt we also added white grapes cut in half. i almost never do that at home, but you could also add fresh apple chunks.

                              surprisingly the canned white chicken that i normally buy is from walmart for around 2.30 per can. it's much cheaper than hormel or swanson, etc. and it actually is a higher quality - go figure.

                                Rotisserie chicken, diced white onion and Dukes Mayo (and lots of it). There's just something different about Dukes. Don't get me wrong, I love Hellman's - but when I'm down south - it's ONLY Dukes.

                                Does anyone know if they sell Dukes mayo in NYC??

                                  Dukes is the only mayo that I like to use. It is a favorite here in the Carolinas. I don't know about New York. My bosses grandson lives in Indiana and when he comes to visit, he packs (very carefully) several jars in with his clothes in his suitcases to take back home with him to last to the next visit.

                                  I am having a chicken salad sandwich for lunch today-I made some chicken salad using of course-Dukes mayo.

                                      I use Duke's mayo. I used to use blue plate since it did not contain preservatives, but now it does....so it is Duke's for me.

                                        One of my favorite chicken salad recipes comes from a place here in Knoxville called The Lunchbox. Here's the recipe:

                                        Dressing:
                                        1C sour cream
                                        1 C Mayo
                                        1 tsp basil
                                        1/2 oz. dry ranch mix

                                        6 C cooked, diced chicken breasts
                                        1/2 C sliced green onion
                                        1 1/2 C chopped walnuts

                                        Combine the dressing ingredients in a large bowl. Add remaining ingredients and mix well.
