AWESOME "Pretzel Chicken"
We just got back from The Anthracite Cafe in Wilkes-Barre, where I had this, the most awesome fried chicken dish I ever had; it was as good as my mom used to make.
Get a few big sourdough pretzels, and crush them up.
wash and pat dry some chicken breasts.
Beat some eggs.
Dip the chicken breasts in the egg, roll them in the pretzels and saute them very lightly on each side, just enough to get the coating set. Then bake them for 20 minutes or so at 350*.
Serve with honey-mustard sauce.
This was just killer. Especially when home-made and not frozen, like EVERYTHING at The Anthracite; all made from scratch.
