Migas

I got an idea while making scrambled eggs this morning for breakfast. I already added some cheese and found bag of Doritos corn chips around (habenero flavor) so I crumpled up a few chips and dumped them right into the eggs and cheese. Wow was that delicious. I think the Mexicans (or at least the New Mexicans) call this "migas" when they add corn chips on top oof eggs. But I liked that it was IN the eggs and also the habenero flavor eliminated salt, pepper, etc and was great.
Anyone else ever try chips on (in) eggs?

Actually in Migas you can put the chips in the eggs also. Sounds like you had a delicious breakfast. I like to saute some finely chopped onion to start things off when I do mine...

Actually the migas that I've had have fresh corn tortillas in them, along with tomatos, onions & peppers & sometimes chorizo!!

NYNM, you're on to a beautiful thing, migas! Mannys Cafe in Carrizozo, NM serves this great breakfast daily(closed Saturday & Sunday). His little cafe, I do mean little, caters to we locals.

What between this thread and the one with the Frito Pie, when I woke up early this morning there was only one thing I wanted for breakfast. I took my El Rey sausage out of its casings, broke it up and sauteed it , added onions and Fritos, added my lightly beaten eggs and when they were just starting to set, added my queso fresco. The only thing wrong with the meal was that just before we were finished, it struck me as a missed photo op; it was a thing of beauty.

I am definitely going to go "munch a bunch" of Fritos now. Thanks a lot for the not so subliminal suggestions.
