I don't see a topic here on tamales, so.... I used to love the hand made tamales I'd pick up at the local tamale "factories" in Santa Fe. It's not easy making tamales, so fresh ones from the actual makers were just great. And of course genuine tamales HAVE to be made with pork (although I will eat shredded beef too). Just a plate of fresh tamales with some red chile sauce was heaven. I now live in North Carolina, so I send off to Ol'Gringo's Chile for red sauce (and green sauce too) http://www.olgringo.com/ and pour it over tamales ordered from Pedro's Tamales http://www.pedrosmarket.com/ Yum yum Almost like being in New Mexico.
