I really enjoy having "Singing Scallops, either at home, or in a Restaurant. But i'm curious, as they are Native to the Pacific Northwest, even though I served them for years at my restaurant in Honolulu. They are generally sold in the Shell, live in a small mesh bag, holding 1 to 2 pounds. They are served in Chinese Seafood Restaurants. Steamed or Sauted in Black Bean Sauce. At home i've cooked them with Italian Parsley, Garlic, Lemon, White Wine, Sauted in Butter and Olive Oil in the shell, and they are sweet and delicate. I've eaven cooked over charcoal, and made Cerviche. They are great in Paella. Irwin
