I just passed small place here in NYC off Union Square called "PIE" which sells "pizza-by-the-pound". Its been around for a while, now, on 4t Ave near 13 St.
All the pizzas are laid out on long flatbread sheets and you pick the kind(s) you want, they cut it to the size you want (by inches) (and with scissors), weigh it and you pay by the pound (ounce, that is). Very interesting varities.
Is there a smimlar concept elsewhere?
