I just went to the Ole Mole event at tortilla flats and just loved all of the moles. My favorite mole was the Mole Negro (The famous black Oaxacan mole—dark, slightly sweet and highly complex. It includes the rare chilhuacle chile. Served with chicken.) What is all of your favorite moles??

Same here, the Mole Negro. It's a symphony in the mouth. My favorite has chocolate and ground peanuts in it.

Mole Poblano, deep dark red brown mole. Never cared for the other variations especially the green. joe

The best I have ever had is at a place called Javier's in Laguna Beach, CA. It is a Mole Negro over chicken that is more complex than Sybil. Here is their website....go to it, if for nothing more than the music....Besame Mucho. http://javiers-cantina.com/

The absolute most mouth watering mole I found outside of Mexico is Valerios Mexican at 1900 W. 15TH ST. In Panama City, Florida, in fact it's the only place surving home made food from scratch.

Mole is sauce. The most common use of it is Mole de Pollo, which is pieces of roast chicken heavily sauced with the mole. Pronounced MO-lay.
