Sweet Carrots

I posted this under International Foods also. I'm looking for the Japanese Sweet carrots served in Japanese Restaurants. They are tender and sweet. Maybe the carrots are cooked in sweetened water?? If you have a recipe for them, please post!!! Thanks for your help!! Barbara Beewright@roadrunner.com

I am not sure if these are the same as to what My wife calls His carrots. She takes the baby carrots. Boils them in water. Drains the water. Then mixes them with Butter and brown suger in a pan before serving. They have a nice glaze on them and are very sweet and yummy.

I cover baby carrots in water add 1 cup of brown sugar and 2 cloves of sliced fresh garlic and boil till tender. Then quickly saute carrots with butter over high heat. Not sure if this is close to your Japenese Sweet Carrots...but they sure are good!

A restaurant by me does it in the open. BOiled before the come to the table then they do a quick fry in butter and sugar. regular sugar. Little bit does a lot.

My carrots are similar to several of yours, but after they get tender in salted water I finish them off in roughly half butter and half honey.

My mom is Japanese and I just asked her. She says she uses Dashi No Moto, bit of water, soy sauce(always Kikkoman)and sugar. They are indeed yummy! She says you must use the Dashi for the authentic Japanese flavor flavor. She also likes to add teeny tiny bits of meat, she also does potatoes like this and they are a treat as well...

It's a powdered soup base kinda like the little packages that come with ramen noodles.

Try cooking carrots in Orange juice...and then add a liitle brown sugar,or a pinch of maple syrup...even kids love those carrots!

Baby Carrots are not baby carrots----they are full sized carrots cut in 1/2 and then sent through giant potato peelers to make them look good. You can make your own at home with a knife and potato peeler. A farmer in Bakersfield Calif has become very rich by being very smart and having lots of carrots to sell.
