Sugar's - Emudo, NM - Sterns Review...

Ok, someone fill me in on whats stuffed into this tasty looking wonder (less the brisket, hot chili and cheese) Seems there's more to this one - Almost looks like chopped black olives. Review: http://www.roadfood.com/Reviews/Writeup.aspx?ReviewID=5170&RefID=1389 The flour shell looks as flaky as a fine pie crust. Curious on this technique alone, but wondering what they actually stuff and season the filling with.. Nashville Hot Chicken was on my must eat list, but this one pretty much ties with first. There's nothing like this in my neck of the woods..

UncleVic, Nashville hot chicken should still top your list, no competition! As for that flaky tortilla, most good ones do that, and that's par for the course in NM (well, should be). I'd figure those black olive-looking bits are charred morsels from the brisket's skin -- and I doubt there's anything like this outside of NM. Amy & I spent two weeks roadtripping there last summer, and it was one of the most wonderful RF trips we've ever taken!

Ayersian is right. The dark bits are from the smoke ring at the edge of the brisket. They add occasional crunch to the beef.

Well, that's funny: We passed by Sugar's a few nites ago on Christmas Eve, on our way up to the Christmas Eve Procession/dances at Taos Pueblo. (which are incredible!!) However, we couldn't find Sugars!!! Just barren land and parking areas next to the Rio Grande River. (Maybe it is closed for the winter??) Amazing, tho, was the town of Velarde, right next to Embudo (Sugars), the fruit orchard capital of NM. The residents lined the entire main highway for at least a mile with farolitos (lit candles placed in paper bags) - we saw them preparing it. The also placed farolitos in holiday designs going up the hillside. Very beautiful. I guess we will check out Sugar's in the summer.

I am happy to report that Sugar's is alive and well. I had a beef brisket burrito there on 13 Feb 09. However, it may have different owners... I didn't recognize anyone behind the window and the burrito didn't taste quite the same... although very good. If you are using Roadfood's POI on a GPS, the address is a bit off (as are most addresses in rural New Mexico). Coordinates for Sugar's: 36 12.510N 105 57.330W

Strange that this is under "Mexican" food...just because something had green chile, don't think it is "Mexican" (maybe "New Mexican"....) Looks yum!

Extreme Glow- Thanks for the report back. I am spending a week in New Mexico in June and Sugar's is one of the places I am most looking forward to visiting. The big question I need answered is if the bulldog is still there?
