Spinach and eggs...Italian style !
Here's a sandwich I grew up with...is healthier than many..and delicious.
My grandmother fried up some fresh spinach in olive oil and a little garlic and salt...and then added scrambled eggs to the skillet. Perhaps add a little Romano or Parm. cheese...mix well..and put on a hunk of crispy Italian bread or crispy hard roll!
It is a great meatless meal too....Italian pizza and some sub shops in the North East make it. Highly recommended
