White bread, Kaiser roll, sesame roll, Burger roll, or what.
So many famous places serve white bread, I don't get it, great Q, crummy wonder bread

      or like Arthur Bryant's served with A handfull of sliced white bread to sop up the juices and dregs.

          Seeded Wonder-type bun with hot sauce and slaw. It's the only time I enjoy a bun like that.

              I've never been a big fan of white bread, but I have to admit that using anything else as an adjunct to BBQ would result in off flavors showing up... with 'cue, we're talking tasting meat and sauce, not the stuff that attempts to hold it together... that should be as utterly neutral as possible.
              Having never been to a Texas beef-and-sausage house and experienced their serving technique firsthand, the more I see and hear of the butcher-paper idea, the more I like it... no extraneous tastes creep in!
              Now... to answer the question literally: what do I want my Q on? My tongue, of course!

                  Hey Al, how ya gonna et that there cole slaw whan ya ain't got any UtenSiles?

                  I like my pulled pork on a potato roll/bun, my brisket on a plate and my pork ribs in my hands. Slaw on the side eaten with a spoon. My greens with habanero vinegar eaten with a fork.

                    I like my bread on the side: cornbread, biscuit, white bread. I don't go there for the baked goods. Very rarely do I order and sandwich in a BBQ place (unless they have a sandwich that just completely intrigues me). I tend to focus on the meat.

                        If you mean pulled/chopped 'que, I like a kaiser roll. Otherwise, like Al said, pile it on butcher paper!

                          Guys.. We 'snuck in' some plastic spoons from our picnic pac in the truck!! I did see several folks using the supplied plastic knives to shovel the "trimmings into their mouth! Louis Muellers does have plastic utensils avail, but you must ask for them !

                                If the joint has corn bread I will usually order a plate, otherwise a cheap burger roll for sandwiches. Also, if two sizes of sandwich are offered, I'll get two (or more) smalls rather than a large. Always slaw on a sandwich.

                                The above applies only to pork. For brisket I prefer no bread.

                                    for ribs and/or brisket- no bread needed-for pulled pork a nice seeded bun with cole slaw on the side. And I don't order sandwiches either- waste of good Q,to put it on bread!

                                      I like mine on the smallest, thinnest type roll/bun, so that I get more meat and less bread,...'After, all, its all about the Q!...

                                      I sometimes will order a "large" sandwich on a "small" bun so that I dont have to deal with all that bread...

                                        Today I used "Sara Lee Soft & Smooth" whole grain white burger buns for the leftover pulled pork I brought for lunch. A little more body than plain white buns but still played second fiddle to the meat.

                                            White bread is perfect for "soppin'" up the juices and sauce of any good "Q".

                                            One of my favorite memories is the "sandwich" at Arthur Bryant's. They always put a piece of white bread on the plate, pile a ton of meat and sauce, then put a piece of bread on top of that. Fries are thrown in there somewhere.

                                            By the time you get to the bottom, the bread has usually melded into the stuff on top. Heavenly.

                                            White bread is usually served with the bbq in central TX, but in Lockhart, you should order saltine crackers if you want to appear local.

                                            Back in the old days of Salt Lick, we not only brought our own beer, we would most often bring a loaf of Buttercrust, which was better to sop up the wonderful Salt Lick sauce.

                                              There is a place in Panama City, FL called Glenn's BBQ. Their BBQ'd Chicken sandwich is 1/2 a BBQ'd chix and 2 pieces of bread on the side. Last time I was in there it was only $4.95.

                                                I have enjoyed a BBQ sandwich at Arthur Bryants, and it is just as Bushie Describes. The sandwich reminds me of the NYC Deli's Corned Beef the way they pile it on!

                                                Here is a photo of a typical Lunch Tray at Arthur Bryants (BEFORE WE APPLIED ANY SAUCE!!). The Sandwich was Janet's "Smoked Turkey", on the tray are Brisket , Pork and Pork Ribs, and Beans! (Yes, we shared!)

                                                  I loved Bryant's, hated Gates but I attribute that to what I ordered; mutton. Unaccustomed to it, it was too gamy for me. I'd certainly try there again. That said, we took the local bus to Bryant's, had just a great great meal and then waddled around the Negro League baseball museum and 14th & Vine music venue.                                                     Tara, you don't want to taste the bread itself, just use it as a holder for the meat, pickles, and sauce. Using a better bread just intrudes on the sensual experience.

                                                        Allen's here in Athens had a BBQ special the other day... pulled pork. Yes, it came from Sysco (or some other institutional supplier), but it didn't have A SHRED of fat or gristle. I ordered up mine sauceless on Luna Bakery Sourdough Bread and went out to Van Ella for my hidden bottle of Scott's BBQ Sauce. I poured it on good (after a most vigorous shaking-up). What resulted was enough to make this ole Ort.-monster purr loud enough that I sounded like a transfer truck downshifting to pull up Baxter Street hill.
                                                        The concensus was that Scott's is the best vinegar BBQ sauce anyone there had ever tasted. Next I'll go over to Batesburg/Leesville and glom up some of Shealy's Mustard Sauce and bring that back (along with a quantity of Yuengling Beer!). Then I'll eat TWO BBQ sandwiches at one sitting, even if I have to deny myself any beer for a week to make up for it.
                                                        Yeah, boutique bakery sourdough is just fine for BBQ with vinegar sauce.
