Spoon Bread

I was feeling a bit poorly this moring when I had coffee with Mamaw Smith at 5:00AM. I read the morning paper and returned next door where I slept a few more hours. I had to take her to the MD for an issue and on the way back, she wanted to make spoon bread for me. Of course I did not refuse. A little while later, she was knocking at my door with a hot platter of spoon bread.
For those of you who do not know what spoon bread is, Mamaw takes corn meal and puts it in a double boiler and basically cooks it. She then adds shortening, eggs and a little seasoning and then fries it.
Very good with a little libation.
She also sent over a few potatoes and onions. Very good.
