Catering BBQ

I want to do some small catering jobs and want to do it legal. I have check with my city and I can not sell anything that does not come from an approved establishment. I agree and was not surprised. My questions are: 1. How doe people cook on site in the open and get approval for this? 2. Can you go to an established rest/kitchen and fix the sides and then sell them? 3. What would suggest? Chris

Around here all you need to do is get your portable equipment approved by the health dept

I got my smokers approved by the local HD, not very easy to do. As for the sides, they have to be prepared in an approved location you may check with your local legion/vfw/eagles/elks to see if you can use their kitchen facilities for a slight charge. I finally broke down and built an approved kitchen facility, now all food is prepped there and transported in hotboxes or coolers to the site. Then smoke on site.
