Pineapple Mojito Gelatin Shot 12 fresh mint leaves 3 tablespoons fresh-squeezed lime juice 3 tablespoons pineapple juice 1 box lime gelatin 1 box pineapple gelatin 1 teaspoons sugar 1 cup boiling water 1/4 cup light rum 10 to 12 small plastic cups or shot glasses Bruise the mint leaves in the bottom of a cocktail shaker. Add the lime juice, pineapple juice and shake the 2 together. In a medium bowl combine the lime and pineapple gelatins, and the sugar. Stir in the boiling water and whisk until the sugar dissolves. Stir in the rum and pour into the plastic shot glasses. Refrigerate until set, about 3 hours. Enjoy!...Russ

For me it has to be a Pimm's Cup. Signature drink at the Napolean House in Nawlin's.

Pimms Cup Recipe Ice cubes 2 ounces Pimms Number 1 Cup 6 ounces ginger ale 2 ounces lemon lime soda or club soda 1/4 cup cucumber pieces or 1 cucumber spear Put ice in a highball glass or mug. Add the Pimms and then the ginger ale and soda. Stir and garnish with cucumber. Serve. ...Russ

This the way I make them: Fill narrow tall Collins Glass with Ice Add 1-1/2 oz. Pimm's 3oz. Lemonade Top off with 7-up Float a cucumber slice on top

gin and tonic with a lime twist, and something my brother in Houston introduced us to - I call it a "lazy man's Margarita": White Cowboy can of limeade (any size works depending how much you want to make) Sprite Tequilla Pour limeade in pitcher, use the limeade can as a measuring cup, and measure out one can of Tequilla, and 3 cans of Sprite, stir and serve.

I stepped out my back door last Friday and noticed the mint was already about three inches high. I immediately grabbed a handful, ran in the house and made a Mojito. I will continue this ritual until the frost wilts the last leaf.

I actually desecrate some inexpensive single malt scotch with club soda and lemon or lime on a hot summer day every once in a while, but I usually go for Tanqueray and tonic with a lime. Light and refreshing. That is, when I'm not downing copious amounts of water and unsweetened iced tea with lemon.

Mine is a Lemon Shandy! Simply pour half a glass of fresh squeezed lemonade into half a glass of beer of your choice. Garnish with fresh lemon wheel.  David O.

For weekend evening relaxing only: A tall glass of Ricard pastis mixed with water over ice, sipped slowly; A Corona with wedge of lime. Daytime: Iced tea, no sugar, no lemon, over ice. Lots of water from our Pur water filter throughout the day.

We were tired but wired after a long series of flights, and my poor husband had to drive from Marseilles to a small town where the family we were visiting lived. Our host took note of our condition and immediately presented us with the pastis. The lovely Xanax-like effect quickly calmed our nerves and resulted in an afternoon nap. We awaked refreshed just before supper...when we were offered yet another glass of pastis, as an apertif. I've loved it ever since.
