Pulled chicken BBQ recipe? Wed, 04/9/08 4:04 PM (permalink)
I originally posted this in the CHICKEN forum, should've started here with the BBQ lovers!

...I had an amazing pulled chicken sandwich in Chicago (Smoke Daddys) over the weekend and am looking for any suggestions for making a killer homemade pulled chicken plate/sandwich. This place had their own sauce which I didn't buy (d'oh!), so any BBQ recommendations (store bought or otherwise) would be appreciated too! The storebought Stubb's is probably my fave. Thanks in advance!

Dinosaur bbq has a cook book and they have a sauce that is called MUTHA sauce. It is the base of every sauce that they make. I make a big batch and gill boneless chicken breast untill crusty on the outside and drop them in the crock pot with enough MUTHA sauce to cover and let it go untill chicken falls apart--shred and plate-its really good. The cook book is worth getting. www.dinosaurbarbque.com

This stuff is the bomb (literally and figuratively). It's an Eastern-style Carolina BBQ sauce that is fantastic on pulled pork and chicken. You can also make reductions with it, zero-fat gravies, etc. with it.

We are empty nesters that use an average of one pint bottle of this a month in various ways.

Their motto,"It's the best ye ever tasted", is a simple statement of truth...

I use smoked chicken thighs with skin and bone. After smoking I remove the skin then put them in a pan covered with Bone Suckers regular BBQ sauce and let them simmer until the meat pulls real easy. Without a smoker you can grill the thighs and finish up the same way. Still very good.

Was it the sauce you liked or the pulled chicken part? If it was the pulled chicken most BBQ joints buy chicken thigh and leg meat already boned and smoke it and add the sauce at the end. It's the same meat all the Oriental joints use in almost 80% of their dishes. Compare de-boned chicken at $1.45 per pound to the current price of whole chickens per LB.

Thanks DR, the chicken was good there, not sure what part of meat it was, but their 3 different sauces are fantastic!

The Dinosaur bbq sauce is especially excellent on chicken. Just FYI.
