Alabama White Barbecue Sauce

I have been reading up on regional barbecue, during my vacation. I just found a recipe for Alabama white barbecue sauce. I never heard of such a variety. If you are familiar, could you share your experiences? I sounds like it is similar to tartar sauce, but for barbecue items? Just curious.

This is a thin tangy sauce that was used for chicken at first. Just that mayo is used for the base instead of tomatoes. Really is alot better than it sounds. Pretty good on all meats and on the side for dipping about anything. Hard to find outside N.Central AL. Goggle white bbq sauce. Plenty of recipes to look at and get an idea of make-up of the sauce. Only use at end of cook will burn.

I can eat it but it's not my favorite. It would probably be better as a coleslaw dressing than a chicken sauce.

The first time I came across it was in Phoenix City, AL. To me it was strange at first but I sorta got use to it. Folks down there seem to enjoy it though. Paul E. Smith knoxville, TN

I make a version of it out of one of Steve Raichlen's cook books, and it is fantastic on grilled chicken or any fish. It is a lot runnier than tartar sauce and it is more tasty, in my opinion. I love it.

Slim is right. It is really good with chicken..My wife had it at Big Bob's (she had their BBQ Chicken) and really liked it. I thought it was good, but went for the traditional sauce. Incidently, their ribs were wonderful! If you go on Bib Bob Gibson's own site...you can order it.

I just tried it for my first time on my swing through AL last week. Had it at both Bib Bob Gibsons and Greenbriar. Can't say I'm much of a fan. From tasting it, I'd have to say, mayo, vinegar, pepper, garlic powder and some other things. It's not thick like a tarter sauce. It has a consistency of regular bbq sauce. As said above, it's intended for use on chicken, but the gal at Greenbiar said that some people put it on thier pork and even dip thier hushpuppies in it.

tried BBG's commercial grocery store version recently. O.K. Sure its better fresh.

If you're interested in some sauce recipes for Alabama White Barbecue, there are several good ones on Recipezaar. We found one that includes a marinade that we really have had great success with.

I've only seen it in AL but I like it a lot. Usually bring home a jar or two from Bib Bob G's.

A little tip. If you make it at home, beef up the horseradish content. You'll like it much better. DT
