I love the way that "chicken ala grande" looks on today's restaurant of the day, Mosca's.
Can anyone provide the recipe for this dish?

    Sorry I can't provide a recipe, but thanks for starting a thread on this place. It has been quite a few years since I have been to Mosca's, but what a wonderful experience it was. It is great to see a review for it now on Roadfood. Like the review says, we drove right past the building, thinking that couldn't possibly be the place!

    Hey, I wonder what Mosca thinks of Mosca's?

      We had dinner at Mosca's about 15 years ago. Everything was delicious!

            Thanks, Big Frank. I'll give it a try. The description on restaurant of the day say's it's slow cooked. The recipe on Chowhound doesn't say but there's enough for me to go on.
            I wanted to know the ingredients and also, when to add the wine. Thanks again.

              I still remember salivating Pavlovianly when I first read the description of Mosca's in Richard H. Collin's book, "The New Orleans Underground Gourmet." -- All subsequent reviews I have read in various tomes and articles have continued to slather the joint with lavish, slavish praise... and, apparently, deservedly so.
              On my one trip to New Orleans (well, almost two... going and coming), I never made it out there. The tip I received was to go on a Wednesday or Thursday about 5:00 or 5:15: "You'll get right in," a local told me.
              The place is actually in Waggaman, Louisiana... an outpost without post office, seemingly halfway from New Orleans into Terrebonne Parish ("Aren't we almost to Jeanerette by now?" first-timers would be inclined to mumble.). Ten million critters and crawdads sing their songs in the grass at the edge of the parking lot.
              This is one restaurant review addition I was massively glad to see. I can only hope that I manage to make it there while I am mortal. Sigh. All the butter and garlic in the world. Double sigh.

                  Trudy and I ate oysters mosca about ten years ago and remember it as one of the meals of a lifetime. I also remember the timted windows on a couple of large cars in the parking lot and walking into the place and thinking i had walked onto a movie set for "The Godfather" it remains one of my most treasured lifetime eating experiences.
