EatingTheRoad SeamusD Kind of in the quesadilla vein... I made burritos. Heated up the leftovers, took a big tortilla, laid down a bed of mashed potatoes, chunks of turkey, then some stuffing, poured gravy on it, then added jellied cranberry sauce. Rolled it all up and went to town. That's a really good idea and sounds incredibly yummy! It was yummy... when I wanted another one later, I didn't even bother heating any of it up, and it was still just about as good, cold gravy and all.

Scorereader we syracuse guys think alike. It appears we do... I had also thought about quesadillas, but I had no cheese and wasn't sure how much I'd like them with turkey (and it would have taken more time than I wanted to spend at that particular moment). Now I'm going to have to try it.

Last call turkey soup/stew/pie filling..... When you can stand it no more then freeze the better stuff and the carcass and the the rest goes into a stockpot and simmers down for a couple hours all on it's lonely. Yank the carcass and pick over for meaty bits. Drop in appropriate herbs and if the broth seems weak add a few chicken boullion cubes. Now's a good time to add the toughest root veggies like carrots, parsnips, and turnip....give it 20-minutes a 1/2 hour than drop in taters...15 minutes later some celery or celery seed....the last to go in are stuff like peas. Now just thicken to your liking or add water to taste and freeze. A couple months from now this will be a gift from last year...
