I came across some info on a local sandwich from STL, "Gerber":

Gerber sandwich or "Famous Gerber sandwich" is an open faced sandwich popular in St. Louis, Missouri. The Gerber consists of a half section of Italian or French bread, spread with butter, and topped with garlic, ham, Provel processed cheese or Provolone cheese and seasoned with a sprinkling of paprika and then toasted.
