Hi everyone! I am going home for the holidays this next week, and would like to take along a nice recipe for twice baked potatoes for my family's Thanksgiving extravaganza. I had some once with 3 or 4 different types of cheeses and liked that very much, but I am open to any other creations you guys might have. Thanks

    Think of a twice baked potato as a gilded version of your favorite mashed potato. After baking 4 potatoes at 400°, I like to mash the potato with a couple of tablespoons of butter, 1/2 cup cream or milk (not cold), 3/4 cup Fontina or Gruyère, 1/4 cup Parmesan, salt, pepper, cream, and chopped chives. Put them back in skins and sprinkle with more of the two cheeses. Bake for another 10-15 minutes.

      The only thing I would add here is a nice sprinkle of bacon bits.

        You can also toss in some par-boiled broccoli florets, but not if you are having George Bush, Sr. for lunch.

          Thanks for the suggestions, guys-----those potatoes sound just fatty and cheesy enough to please the Canadian side of the family. Happy Thanksgiving!
