Buffalo Cuts

I was just given half a freezer of all sorts of fresh Buffalo cuts. Although you can never go wrong with ground buffalo, the other cuts (Chuck, Rib, Cross Rib, T-Bone..etc) are notoriously hard if not prepared properly. Any suggestions?
