Does anyone know what this one food is called that has Brisket wrapped in a tortilla shell and has chile peppers, hot sauce, and whole bunch of other stuff on it? Is it called a Brisket Burrito or is that something else. I was wondering if anyone has the recipe for that?

      I'm guessing you could braise the brisket with some dried pasilla chilies or something similar, with a few garlic cloves and some peppercorns, an onion, til it's tender, then shred it. Once that's done you could quickly combine it with some tomatoes, onions, etc. for your tortilla filling. I do that with any type of roast to good effect. Or use some leftover cooked brisket.

        Are you thinking of machaca? It is a stewed, shredded beef.

          The machaca I grew up with with was first air dried like a jerky, then shredded and cooked with a sauce to be made into anything you want, but since it is dried it's gonna be a little chewy. So gotaTexfriend, you have a couple of choices going now

                That's a harder workin' project.

                I knew it as carne seca and then you could make a bunch of good things with it.

                      Could be G.A.T.F. is simply talking about a shredded beef burrito. In my experience here in the NW, the shredded beef is moist and in juices, while the macchaca/ carne seca is much drier as described, and frequently served as a torta.

                        Ok, All I know and remember... the guy was cooking it over mesquite, oh and I found out what bar in Lubbock he was cooking it outside at, it was called Cancun Saloon if anyone from Lubbock is firmiliar with that? But, that Machaca seems to be close to what I am talkin about... Thanks for your replies!!! If anyone is firmiliar or has other ideas, I am all ears!!                           Machaca is also often served scrambled with eggs, which is just WRONG! I want pure, unadulterated meaty goodness!

                            gotaTexfriend, you can wrap just about anything in a tortilla. You asked for a recipe for what you described, but you just gave it. You could add pico de gallo which is chopped tomatoes, onions and cilantro in lime juice, chopped jalapenos, cilantro, avocado or guacamole, cheese, any type of salsa - the possibilities are endless!

                            You can use BBQ brisket, fajita meat, chicken or even browned ground beef. As to what to call it, I guess it could be called a wrap or a soft taco. I'd just call it delicious!
