When I lived outside Philly there was a restaurant called Havana in New Hope, PA that made a great Day After Thanksgiving Sandwich... sliced turkey, cranberry, stuffing, slice of swiss cheese, mayo, all served on a baguette. Don't know if the restaurant is still going there, but memories of that sandwich inspire me every time I have leftover gobbler.

Sliced turkey on wheat bread...with Best Foods Mayo/Hellmans, avocado, pickled jalapenos, jalapeno jack and...sprouts...and yes, I am from Southern California...

Sandwich? I guess my favorite way to enjoy the leftovers is just heat up some turkey and dressing and have it on a plate with cranberry sauce. If I'm going to make a sandwich, my favorite is a turkey club, sliced thin, on white toast, with the usual lettuce, tomato, and bacon. YYUUUMMMMM! My Mom takes the leftover carcass after it's been picked reasonably clean and makes turkey soup.

Layers: - White bread
- Hellman's mayo
- lots of salt & pepper
- breast meat
- a little more salt & pepper
- Hellman's mayo
- jellied cranberry sauce, sliced
- another slice of white bread

Option: bacon, tomato
Always on white bread, the softer the better

You start with sprouted wheat bread, best foods mayo, sliced turkey (white or dark okay), avocado, sliced pickled jalapenos, and...sprouts. Yes, I am from Southern California...

If I have alot of left over turkey, I make turkey salad, just like I do chicken salad. I remember, one year, we had a family gathering on the Saturday after Thanksgiving and I made turkey salad. An Uncle of mine, who didn't care for turkey kept getting extra helpings of the turkey salad, saying that this was the best chicken salad he had ever eaten.
